One other point, there are hundreds of nice restaurants in NYC. You can call the manager and say that you think this fee is too high and if they refuse you, cancel the reservation and go somewhere else. In any negotiation you have to be prepared to walk away.
The above MO is exactly what I do in EZE.... in this case, Im a co-host of sorts for this dinner and walking away is not an option. Im happy that $35 per bottle seems to be OK for Manhattan according to the links provided above.
