While I agree with what you are saying, and that FAs should be able to depart from normal procedures for safety reasons, I like it better when they don't use the cart. Sure, I really know in the inner recesses of my alleged mind that the entree was cooked 6 hours ago, and it has been sitting in a warming cart with the dish covered by foil for the interim, but having the foil removed in the galley means I am not reminded of that fact at the time, and that is somewhat more pleasant. If the only reason for doing cart service is to make sure that the FAs get through the entire issue of People magazine with sufficient time to thoroughly discuss Brad Pitt's love life with the other FAs prior to landing, I would prefer that they not use the cart.
