I always pay lump sum, for instance if someone is always getting me drinks and making sure that I don't run "dry" then there's a $10 note to the man/lady once I'm ready to leave. I usually let them know upon receiving my first drink that I'll give them a small tip on the way out, just to make sure they know they're not going to get shafted...
