I may need to travel Toronto to Shanghai and will not be able to predict my return date with any certainty (could be anytime within the next few weeks). If so, I was thinking of buying a Latitude fare on the return leg for increased flexibility.

Are all Latitude fares fully flexible for date changes or are there any catches based on the class of Latitude fare?
