I still want the option to make my own drink and I DON'T want to make idle chit chat with a bartender. I realize some people like this small social interaction, but you also need to realize that some of us don't. I prefer to keep to myself and get work done. I want the option to enjoy my free drink without interacting with anyone and I don't want to tip for that. So to make me as happy as you are with your bartender, how about a self-service bar option and the option to have a bartender/waiter to come and take your drink order that can welcome you by name and who you can tip. Seems fair to me. But the option for me to get a drink without feeling obligated to tip someone for doing what I'd really rather do myself seems obvious...
