Two USB ports would allow you to charge an iPhone for instance, while having a USB stick in the other port, containing MP3's to listen to via the IFE system or perhaps a movie or two to watch on the IFE screen.

The RCA jack, if Red / White / Yellow, are there to allow you plug in the A/V output of your laptop, or other portable movie player (i.e DVD player) to allow you watch a movie via the IFE screen.

If there was no Yellow RCA present, well then the Red / White RCA's are another way of inputting an audio source into the IFE system.

A similar arrangement can be found in more & more hotel rooms these days, where there's usually a panel near the TV, which allows you plug in a media player or games console to view via the TV. The rooms at the Sofitel at T5 would be a good example of this.
