You've already identified your problem, which is attempting to book a fairly nice property, during high season, at short notice.
My parents are actually at this property now, booked under a cash and points rate (so, even more limited than a regular redemption). The key was booking it in advance. I understand your frustrations, but personally I have found Starwood to have the most award availability as long as you plan in advance. With a high point balance, no reason not to.
