No question - take the middle seats - especially since it will be you and your partner's first time in the suites (I assume that is what "premier experience" is refering to?). Its really the only possible way to share some of the experience of the flight. You will be divided by a rather tall console, but you'll still be close enough to have a fairly private conversation. You'll be missing out on the window view, but I'm reading between the lines and guessing that the experience on this flight will be more about the suites than the view. Lastly, I don't think using the fold-down seat built into each suite is really an option. Sure, AA markets it as a "feature" of the suites, but honestly, I've NEVER seen anyone use it. Its an awfully small little seat. I can't imagine it would be comfortable for more than a few minutes.
If the window view is important and you want to be closer to each other, I'd advise that you try to get on a Pacific configured 777 with the coffins. They aren't quite a cool as the suites, but they are still great first class seats that go completely flat. The coffins would be my first choice if I were traveling with someone. But then again, everyone should check out the suites at least once. Maybe the suites one way and the coffins back if you can swing it?
