I am going to put my mega-geek hat on, but E* will never get to Amsterdam, as the new high speed line uses ERTMS signalling.
ERTMS stands for European Rail Traffic Management System and is designed to gradually supersede domestic high speed signalling systems such as TVM (Trasmission-Voie-Machine or 'Track to train transmission') which is used in France.
As Eurostar has to negotiate signalling systems of Britain Classic, France Classic, France TGV (UK, French and Belgium high speed lines and the Tunnel) and Belgium Classic, there literally isn't enough physical space in the cab for any extra signalling equipment that would be needed (i.e. ERTMS).
I suspect the ICE making its way to London shortly will be an ICE3M which already runs from Germany to Paris over the LGV Est, as these sets have both TVM and the French Classic system (KVB?), the latter for some peculiar reason is what is used on the slow speed approaches to St Pancras.
Simple it ain't!
