Weekdays is more drink and lounge. El Coctel is nice on any day of the week. The bund bars are nice also for a visitor on a weekday. For music and dancing, try Bar 88 or Phoebe 3D, you won't be disappointed.
Things start early in China, especially on weekdays. Places will get busy pretty quickly (on weekends). No lines (except at 88).

Off-topic: Had drinks at the rooftop bar of the Waterhouse Hotel the other day, was quite impressed. Try the wasabi martini.
