How do you expect people to stand up in a confined space with no support? Unless you're really short, you have to halfway stand up so your head doesn't hit the passenger service unit.
If you have a strong back, it's no problem to stand up that way just using your back muscles. Most people don't have backs that strong, so they need to hold on to something, like your seat back.
