Haven't been to SFO for a long time. Travelling from MEL-EWR through SFO on UA. Flying international then domestic flight then the opposite two weeks later.

Inbound, your bags will be tagged all the way to EWR, but in SFO you'll need to clear immigration, collect your bags, clear customs, and then drop off your bags again almost immediately. You'll then need to re-clear security before re-entering airside.
Outbound it's easier - your bags will be checked all the way through to MEL. In SFO you can walk air-side from the UA domestic terminal to the international terminal. When you get to SYD you do NOT clear immigration, but go straight to the transfer area where you will need to re-clear security before boarding the plane to MEL where you will clear immigration, collect bags, and then clear customs. (Presuming you're on UA for SYD-MEL, if you're on someone else it's different)

One more thing. Anybody tell me what United's Red Carpet Club at SFO is like. We have a two and a half hour layover.
SFO's RCC's are pretty much as good as any in the US, which is to say they are fairly mediocre. There's 2 - one in each of the domestic and international terminals, but they are basically equivalent. In SYD you'll be able to use the Air NZ lounge which blows away of the RCC's.
