Yes - definitely possible, and highly recommended. Not only is it less points, but with AC flights, you'll be charged a fuel surcharge, whereas with most Star Alliance airlines on an award ticket you won't.

Search the forum, lots of threads about Star Alliance awards.

Aeroplan awards are one of the most flexible...on the way home, you could route yourself through Europe for an extra stopover, or just to try another *A airline. We refer to this as a mini RTW...a few threads on those too.
