The size of MD11(Apart from the smaller wingspan) is almost equivalent to the size of an A330, so I suppose that the A330 won't be safe in these treacherous conditions too?
I have landed in a A330 twice from Australia during a T8 and it was not bumpy at all. The landing was fine.

A T3 is generally nothing much.
A T8 is when all non-essential businesses close and people go home (to relax or drink or play majong, generally). The ferries stop running and the buses also stop (the Airport Express will still run and the MTR will run, possibly at a reduced schedule).
Above a T8 it is not good at all.
The HK government will generally give a warning of 2-4hrs before "lifting" the T8 signal. This gives a chance for people to get home.
