IMO interlaken is quite decent for the duration the op wants to visit.. if the weather is fine the next morning they can also plan a trip to Jungfraujoch or take a trip to the Trummelbach falls ..Note that the trip to Jungfrau is very expensive so it makes sense only if the weather is crystal clear..
