If birds put out the engines, could one pilot and one or two air steward(esse)s go through all the checklists and get the plane safely down into the river?

I did read one story about a school bus driver having a heart attack and one of the kids noticed it in time and was knowledgeable enough and strong enough to stop the bus safely.

"Dismissing the vital role of second engines, Mr. ---- suggested money could be saved by shutting off all except one engine for the rest of the flight once the plane was airborne."
