Actually at several times in the past (including one point after 9/11, if I recall correctly), there was a cold plate snack service STL-DFW.

For a while in the mid-90s, there was actually snack service on AA and TWA on STL-ORD. I flew TWA back then and they would serve a half sandwich with a small side salad. Not sure what AA had on offer.
