I use Video Redo Plus to put the files together. It works for almost all videos (some for some reason don't work). I use it to raise the volume (sometimes the volume isn't high enough) & combine all the files into one. Also, sometimes the language is off. So you can select the stream (usually it's something like x80 for English) and you'll be set.

and it works very nicely when combining VOB files into an MPG file without any re-encoding ^ if it is not needed , but as mentioned on the web site, it can only manage one audio stream when recombining files, while I usually like to have the English, French and director's comment soundtracks in the output file.
I'll have a look at MPEG Video Wizard to see if it has the same limitations.

The 1 GB chunks are VOB files -- this is part of the DVD spec. Any good player software will just see the folder as a DVD and play it as one.
