The best way IMO is to write a snail mail letter to the GM detailing the reasons you felt the employee was exceptional (e.g. attentive, customer-oriented, did x and did y..., most ably represented your hotel and made my stay very special, etc.)

I believe Mark Williams is the current GM? Seems to be very receptive and oriented to customer comments and feedback.
