You should also try Le Comptoir du Relais by Yves Camdeborde, which is certainly the best gastronomic bistrot in Paris.
According to website Guy Savoy is not open until 25 Aug though...L'Arpege is indeed, so thanks for the info! Around St Germain there is also Boullio Racines which looks quite nice. Might give it ago.
