I haven't eaten brunches at the Beijing hotels to compare, but based on the restaurants themselves, my vote would be for the Grand Hyatt.

Made in China at the Grand Hyatt has a top rated Peking Duck, is a large space with an open kitchen. One of the top rated hotel restaurants in the city, I would guess they would have a great Sunday Brunch offering.
