I like all kinds of different things inside and outside an omelet, But I don't like 'fluffy' eggs. The best I've had use well beaten eggs spread thin and wide on a large griddle, then rolled up like a burrito. I don't care for the traditional 'folded over' type, though I'm a master at making them for others.
