These types of stopovers are no longer allowed - it would have to be booked as 2 separate awards (JFK-NRT & NRT-HKG). Also, to fly to HKG on AA miles you have to fly via Pacific route.
Stopovers are only allowed in NA gateway cities.
With the One Way award system I believe he can book 2 awards as JFK to LHR (NA to Europe) and then a LHR to HKG (Europe to Asia 2) award. This of course would cost more miles than a NA to Asia 2 award.
He cannot book a single NA to Asia 2 award using a route via Europe.
