Kauai is a small island. Poipu area fine to stay in but there will not be much to get excited about.
My wife and I had scheduled a week in Princeville (North end of island). After a couple of days we dashed for Oahu.
"Ohhhhh, I love the nightlife. I got to boogie...."
I've spent up to a month at a time on the island and never got bored. Now, I do understand if you need bars and nightlife, it's not the place for you. They really do roll up the sidewalks at 9:00. When I'm home, I'm seldom in bed before 2 a.m. When I'm on Kauai, it's more like 10:00, but I'm usually exhausted and ready for it.
For the op, I think you'll do fine no matter how long you stay. Get the Ultimate Kauai Guidebook. It has listings and directions to all the beaches and hikes. To get to some of the beaches it IS a hike!
For snorkeling and boogie boarding, definitely Poipu to stay.
