Hope this reply isn't too late to be of use to you... I did EasyJet from MAD to RAK (Marrakesh) in January. My plane was delayed for about 3 hours, but I met a couple Danes on my flight who reported that they had been stuck in Madrid for 3 days - the two previous days they had cancelled because the plane needed for the Marrakesh flight was affected by persistent fog in Italy. They were clearly quite frustrated by the experience... Since you mentioned cramming stuff into a carry-on, you should note that the private baggage-handling contractors in Morocco are quite serious about earning commission from EasyJet baggage fees - you might (but by no means are guaranteed to) be able to slide by with a US-sized carry-on in Madrid, but you will definitely want to be careful to stay within the limit on the return flight.
