Official MCT T4 > T5 is 1 hour 45 mins.

Yes you can do it airside. Just follow the purple Flight Connections signs and get on the bus to T5.

When you check in at FCO, ask if your bag will be checked through to ZRH. The more time you have from T4 > T5 the better the chance of your bag making it!
