Your ticketing IS permitted. Your ticketing practices are perfectly ok as long as you don't return to your point of origin prior to the first Sunday after departure (or other minimum stay, as applicable). So you are free to book trips within a trip as long as you don't violate the minimum stay of the outer trip (IAH-SAN) by returning to IAH prior to Sunday morning.
Just don't book any IAH-SAN tickets that require an eight month minimum stay.
