The Oberoi, which is way out of the centre near the Giza pyramids, is still being refurbished. When it is entirely finished, it should be rather good.
Meanwhile, if the OP does not want FS, then the Gezirah Sofitel is surprisingly good. It used to be the old Sheraton Gezirah, but Sofitel brought in Pierre Yves Rochon to do a complete re-design and the result is excellent.
The hotel, which sits on an island in the midst of the Nile, has some great restaurants, including one that actually floats on the Nile. It is a much underrated hotel.
only downside is that service, upon occasion, can be a bit naf, but that is because Sofitel inherited quite a few old Sheraton staff. Still good, though, especially Al Kebaby restaurant, which has been there as long as I can remember and has best Egyptian food in Cairo.
