You need your boarding passes...
It sounds like the problem is with Air China (CA). If CA tells UA you weren't on the flight, there's not much UA can do since CA is the one granting the miles.
Assuming your flights earned mileage, you need to dig up your boarding passes and fax them to UA - that's the only physical evidence you have. I don't have the fax # handy, but hopefully someone can post it.
