It is supposed to be a nicely ironed white or cream coloured linen serviette.

markinberks got it almost right, but ommited that the bottle should be held at a slight angle, to minimise the risk of overflow, as if there is more surface area there is less risk of overflow when the cork is removed.

I don't know what the world is coming to.
