Chef Cliff...Any thoughts about offering a gluten-free option on board?

Last year I was diagnosed with Celiac Sprue which is a gluten allergy. Ever since, I've watched what's being offered on board in-flight. Reading a lot of labels I've found that the chips and salsa pack they sometimes offer is GF, but in general, I'm out of luck. Didn't realize before being diagnosed that around 1% of the general population are allergic or intolerant to gluten (found in wheat, barley & rye). I've seen a growing number of restaurants that are offering gluten free menus and options. Hope the trend catches on with AS/QX as trying to find a GF meal in an airport is challenging as well.

Anyone seen other options popping up in-flight on AS or other carriers?
