I have done a great deal of transpac flights the past 8 years and from what I can tell the service is no different HNL-NRT than SFO/LAX-NRT except that the flight time is longer from SFO/LAX.
I rarely fly in F, but have done the transpac routes in C and the service isn't any better or worse regardless of whether you fly SFO/LAX/SEA-NRT vs HNL-NRT.
I recently did HNL-NRT and the meal options were similar if not the same as one would get SFO/LAX-NRT.
