I think the official policy for Princess is one bottle of wine per person. That said, in general it seems to be only rarely enforced at best. I've heard that Princess will at least sometimes confiscate other alcohol at embarkation, but even that seems to be not all that common. And I've almost never seen them try to collect it when you come in from a port (I've seen the set up a table to collect it, but at the same time, they were doing basically zero enforcement of that).
Heck, the old town pier in San Juan you almost have to walk through the duty free store before you get on the ship. The one time I've sailed from there they made no effort to collect anything.
