So it was German soil and the citizenship is governed by German laws which are governed by ius sanguinis (your parents are decisive in most cases). I do not really believe that Canada interferes with other countries laws that way. Can it be that the aircraft in your example was under Canadian flag?
No, they were all different airlines. My understanding is any baby born in Canadian Airspace becomes a Canadian citizen.
