Perhaps the rising cost of tomatoes has caused the catering service to use alternatives. The winter freezes in Florida killed a big portion of the tomato crops. I know the price doubled earlier this year at the grocery store. Not sure if the prices have dropped since then. I just stopped buying tomatoes myself because of the price spike. Perhaps peppers and corn are currently more in line with their targeted food costs than tomatoes.
