It would be great to have some local and unique food establishments at the airport/LAX. The question is, can Sodexo and the Food Service contractors follow the same standards as the companies they are to represent?
This is the equivalent of buying all of the proper ingredients for a recipe and then not following the proper cooking procedures to make the food. It doesn't come out 'right'.
Bring the new concessions in, but Sodexo needs to get with it and follow standards, otherwise, bring in a better contractor.
