The class of the car rented is a class F. Does that mean that they will place a hold on my credit card for a deposit of 11,000 euros? In that case, the company will not be able to, since this is over my credit card limit.

You have it correct my friend. When I travelled to France last year, Sixt wanted to charge me EUR 5,000 as a deposit. Fortunately, I had the forethought to obtain documentation from my insurance company (Nationwide) showing that I was covered in full.
