Plato90s: When AA announced last year that all European service would be 767 or 777, there were several reasons. Among them:

1. A300 has limited range when full (no problem for the Boeings)

2. A300 has superior cargo lift on shorter flights, making it ideal for Caribbean, where cargo is king

3. AA assumes that premium passengers prefer Boeing to Airbus (they're probably right)

4. Fleet rationalization: made sense to have uniform configuration for a small (35, now 34) fleet.

5. Suspicion that Caribbean passengers are not as finicky about the make of the airplane

There are probably more, but these are the ones I remember from the announcement last summer. IIRC, AA announced this when they announced the purchase of replacements for TWA's P&W powered (and incompatible with AA's GE powered) 767s. Maybe the timing is being moved up because of AA587, but it's been in the works for several months now. Sure, loads are down for now, but AA wants to be positioned properly when (if?) the demand returns.
