Crew members seem to be very switched on about it.
Of course! The crew have a passenger list. Exactly the right number of Club meals are loaded for the checked-in passenger figure. The only time there may be extra is if someone fails to show at the gate or is offloaded at the last minute (and crew are very switched on to watching for an "offloaded" passenger making his way on board without the ground staff's knowledge as this is a potential security breach.)
The crew would begin to scratch heads as soon as they realised there were more passengers than meals so you would then start looking at the passenger list and mentally ticking off names. (It's a bit awkward and embarrassing to explain to someone that you haven't got a meal for them!) You do pick up very quickly where the "rogue" passenger is sitting.
