No, you need to make the change before the flight, otherwise you will be a no-show and lose the ticket. Also keep in mind that as time passes by, the availability of inexpensive fare buckets goes down, so the fare difference that you will need to pay in addition to the change fee will increase.

And when it says amendable, does that mean I could even change destination, say a CDG-BCN, which sounds way more appealing than a CDG-HAM?
No, you cannot change the routing.
