Probably be busier due to weekends being the logical time for leisure travelers to depart. It would also attract more business travelers than a midweek departure. It's the off season so you may still be okay, but it be a relatively harder day to upgrade. Personally for such a long flight I chose to depart on a day with maximum chance of an upgrade.
