no one is/was knocking home cooked food, I was simply stating that there may be accomplished home cooks out there but few can cook the variety that I prefer. It probably is from lacking talent, but also could be from lack of time (do most have the time to cook stocks properly?), or even the actual cooking equipment (I know of VERY few people that have a hot enough wok at home). What you describe sounds great but I'm guessing I'd tire pretty quickly I believe. IMO I don't think duck into risotto is wild.
This is not a knock of you or your cooking, just an opinion on what I've read.
