I'm not a fan of In-and-Out, but I agree that most airline meals I've had haven't been a big benefit. We did have some good food on Continental's Biz-First Class between Brazil and Houston, including an excellent Delmonico steak (not a cut I see on restaurant menus much), but even they couldn't do eggs well. On our return trip we chose cereal over omelette.
