Should not be a problem, this is a Park Hyatt after all.
I have exchanged breakfast certs. for almost everything throughout the last years, incl. breakfast on the day of arrival, appetizers for dinner instead of breakfast etc.
I recommend to contact the property in advance, however to let them know.
