For SFO-FRA, take the evening 777 flight (UA 926), not the 747-operated UA 900 flight, if you want personal screens in economy. It won't be AVOD (most likely... so far only one aircraft upgraded), but it's better than the big screen everyone-sees-the-same-and-it-aint-kids-programming on the 747.

DXB-IAD should be on a 777 anyway, AFAIK.
