Since you purchased her a ticket from a Plat account, she should have all the same benefits as you regarding luggage, so 3 pcs @ 70lbs (32kg) each.

I am not 100% sure if when she checks in for the return at the COPA counter in quito they will give her any issues, but her reservation should show up as a plat. In IAH she should not have any issues checking up to 3 bags all the way to Quito.

Paying with your CO card makes no difference, since the card is yours, not hers.

If her boarding pass reads Platinum when you OLCI, then you should be ok.
