I usually work until at least 11 pm and like to come back to the hotel to exercise to wind down from the day before going to bed. Two egregious examples are the W on Lexington and the Westin Times Square. These are major hotels in the heart of NYC and they should absolutely provide 24 hour fitness centers. This is a major reason why I often choose to stay at the Four Points Times Square over these two.

I think they like to close them to avoid drunken fools going in there at 3 am and trashing the place.
You'd be amazed at the behavior you can witness sometimes....
I have had moderate success with making individual arrangements for access.
For example Le Meridien Khao Lak, Le Meridien Cyberport (HK) and St. Regis Singapore have sent someone to meet me at the gym to let me in and when I am done I call them back and they come back to lock up again.
