It's been some years (like 7 or 8) since I was in Celestun, but I'll toss out my thoughts if they can be of any help to you.... It was exceedingly undeveloped when I was there and offered, frankly, little to visitors. The food and entertainment scene was largely non-existent at the time. The beaches, as you note, are not fine sand beaches but rather shell beaches.
Assuming things in the area are still about the same as when I was there last, I would have to caution that it would take a very unique set of folks to really enjoy a full week here in a rented home. In no way am I trying to dissuade you -- if you've fully researched it and it sounds like your kind of place, then go for it!!!! That's all that matters!
I love all-things-Mexico and have been fortunate to work and vacation there for a few decades. Celestun would not be in my top 100 vacation spots, but I surely loved my sinngle day there years ago on the water.
If you decide to ultimately spend a week there, I hope you'll let us know how you made out. Enjoy your time in this part of Mexico -- it's a remarkable, memorable place in so many ways.
