There is no program that I know of that guarantees a late checkout. What program guarantees a late checkout? (Except SPG for Plats --- although even there, there is a "subject to availability/no conference date/no special event" clause).
In general, across programs, the best you get is the ability to request a late checkout, but my guess is in the case of Hyatt, very few requests are denied.
Therefore, to say that late checkout is not a benefit of the GP program or a published benefit is just false given experience and the website. Further, Hyatt is one of the few programs that extends that late checkout benefit to its entry-level ("Gold") members.

I was just doing that....The OP should have some confidence that the request will likely be approved since the OP is a Plat....obviously not guaranteed.
The question was - Can a platinum checkout late? The answer is: 99.9% of the time ... yes.
