Yes, the checked luggage will travel with you through every single connection. Per UA's rules, you can't change the longer routing to a more direct one for free, but it is possible that you meet some GAs who are kind enough to.....

I just ticketed an itinerary of YVR-DEN-DFW-IAD-BOS today. To meet the departure and arrival time of my wish, this itinerary cost about $100-$200 less than the more direct YVR-DEN-BOS or YVR-ORD-BOS routings and give me about 1000 more EQMs, thanks to the ITA tool and unavaca's magic script.
